For interferometric observations, the highest time resolution is set by the shortest correlator dump time. In so-called time division mode, the correlator can output every 16ms (though at reduced spectral resolution), so you can Nyquist sample a 32ms variation. One of these modes (mode number 70) will be available for Early Science (see http://science.nrao.edu/alma/earlyscience.shtml and ALMA memo 556 available at http://science.nrao.edu/alma/aboutALMA/Technology/ALMA_Memo_Series/main_alma_memo_series.shtml or Escoffier et al. 2007, A&A 462, 801 for details). For single dish observations with the total power antennas dumps as short as 1ms are possible, but this science mode is not yet commissioned and may not be available for Early Science.
